Larb gai is very good since it is very light and like a salad consisting of spiced chicken with lettuce, cucumber, and steamed sticky rice with a simple dressing including fish sauce. I think as far as calories go, this is the best choice.
Coconut milk is not so bad for low carb in the curries, but one must watch the rice.
You can use low fat coconut milk in curries as well to cut back on fat consumption. It tastes pretty good actually.
As far as the hot peppers go, those will increase your metabolism, but you would have to be able to eat spicy food. Otherwise, it is left out. References :
