Larb gai is very good since it is very light and like a salad consisting of spiced chicken with lettuce, cucumber, and steamed sticky rice with a simple dressing including fish sauce. I think as far as calories go, this is the best choice.
Coconut milk is not so bad for low carb in the curries, but one must watch the rice.
You can use low fat coconut milk in curries as well to cut back on fat consumption. It tastes pretty good actually.
As far as the hot peppers go, those will increase your metabolism, but you would have to be able to eat spicy food. Otherwise, it is left out.

I would like to recommend you about papaya salad or it is called Som-Tum which is good taste and good for the health, because it’s low calorie, good taste, spicy and full of vitamin and mineral. And also it’s suitable for diet, excretory system and beauty.

Tom yum soup is relatively healthy and oil-free, and yet flavourful if you can take spicy food. Also, Thai mango or papaya salads are great as well.

Most of the Thai dishes are very healthy, unless it is deep fried or cooked with coconut milk or sugar such as desserts or curries. Try the salads as most are cooked with plenty of garden or seasonal vegetables with little or no oil.
